How to Make 4 Cheese Mac and Cheese

Have you ever wondered how to make 4 cheese mac and cheese from scratch? Roxbury’s very own Gianna Grassi has the answer!


  • 3 oz of penne pasta
  • 1/2 cup of mozzarella
  • 1/2 cup of parmesan
  •  1/2 of brie
  • 1/2 cup of ricotta
  • 1/4 cup of milk
  • 3 tbs of unsalted butter
  • 1/8 tsp of salt


  1. Bring a medium saucepan to boil, add a pinch of salt to the water
  2. Add the penne to the water once it has boiled
  3. Wait 12-14 minutes or until fully cooked
  4. Drain the pasta, add cheeses, milk, and butter to the pan and stir
  5. Place pasta back into the saucepan and stir well
  6. Finally, serve and enjoy!
